Clean Chicken Fajitas

Ingredients

  • 3 boneless skinless chicken breasts cut into strips
  • 1 red, orange and green bell pepper
  • 1 large yellow onion, halved and sliced
  • 4 cloves garlic, minced
  • 2 1/2 tsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt

Directions

  • Place chicken, garlic, onion and spices in skillet over med/high heat and cook until done
  • remove and place peppers in skillet and cook until almost done, add chicken
  • Cover and cook on HIGH heat 10 min on low heat 
  • serve with your favorite chip, tortilla or rice!

Turkey Meatballs and Parm Carrots

Ingredients

  • 1/4 Small Onion Diced very small 
  • 1/3 Cup quick oats 
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Paprika 
  • 1 tsp salt
  • 1 1/2 tsp Yellow Mustard (powder or prepared)
  • 2 tsp Garlic Powder
  • 1 LB of ground turkey
  • 2 Eggs

Directions

  1. Preheat the oven to 400 degrees. Grease the wells of a muffin tin

  2. Place the onion, oats, turkey and spices in mixer fitted with paddle attachment

  3. Mix several times, add eggs and mix until combined

  4. Use Icecream scoop to fill muffin tins

  5. Bake the meatloaf muffins in the preheated oven for 30-35 minutes, or until muffins are golden brown on top and cooked through, 165 deggrees!

Garlic Chicken with Zucchini and Corn

Garlic Chicken with Zucchini and Corn

Ingredients

  • 3 chicken breast, cut into 1" pieces
  • 2 TBSP of coconut oil
  • 2 large garlic clove, crushed
  • 1 tsp salt
  • 4 small or 2 large zucchinis cut into quarters
  • 2 cups frozen corn

Directions

  1. Chicken: Preheat skillet on medium heat and swirl oil to coat. Add garlic and cook for 10 seconds. Then add chicken, sprinkle with salt to taste. Cook for 10 minutes uncovered, stirring occasionally. Transfer to a bowl and set aside.
  2. Zucchini and Corn: add corn to skillet same way that you cooked the chicken but cover it, I like my zucchini soft so I cooked it in the microwave for 2-3 min in a bowl with plastic wrap covering it.
  3. Add chicken back to skillet with corn and add zucchini, stir. Remove it from the heat and serve by its self or with your favoite side

 

Valentine's Day Treats

I love Valentine's Day so much! Not only because my amazing hubby always brings home flowers and a card, but because he tries his hand at baking cookies!  So, for this months post I am going to share my FAVORITE recipe I have found for chocolate chip cookies.  This recipe is from my best friend and soul sister Blair!  Easy for beginners and the best of cookie bakers, this foul proof recipe is melt in your mouth delicious.

Ingredients

-2 sticks of butter (blue bonnet)

-3/4 Cup of Sugar

-3/4 Cup of Brown Sugar

-2 eggs

-1 tsp of Baking Powder

-1 tsp of Salt

-1 1/2-2 tsp of Pure Vanilla Extract

-2 1/2-3 Cups of Flour

-1 bag of Semi-Sweet Chocolate Chips

Instructions

-Preheat Oven 325

-Mix wet ingredients together 

-Add dry ingredients slowly 

-Stir in Chocolate Chips

-Bake 11-12 Minutes

 

A Beautiful Fall Wedding

I had the great honor of making my oldest cousins wedding cake and cupcakes for their beautiful fall wedding! These two love birds were married at an amazing setting downtown Indianapolis.  The bride was stunning, the night was perfect and the groom was love drunk!  The cake was a four tiered, 4 feet tall, layered statement of elegance which included flavors of; White raspberry, Spice cake, chocolate and funfetti.  Decorated in classic buttercream and stunning flowers.  This cake was the highlight of my year and holds a very special place in my heart.

Gingerbread Man Cupcakes

Ingredients

  • 1½ cups flour
  • 4 teaspoons of Pumpkin Pie Spice
  • 1½ cups butter (soft)
  • 1 cup sugar
  • ½ cup brown sugar
  • 3 tablespoons molasses or maple syrup
  • 4 eggs
  • 1½ teaspoons vanilla

Icing Ingredients

  • 5-6 cups of powdered sugar
  • 1 cup of butter (soft)
  • 1 tablespoon cinnamon
  • ½ teaspoon vanilla
  • 2-3 tablespoons heavy cream

Preheat Oven 350 and bake for 25 minutes!

SPOoOoOoOoOoKY Ghost Cupcakes

Spooky Ghost Chocolate Oreo Cupcakes

1 box Devil's Food Cake Mix

3 eggs

1/2 cup oil

1 cup milk

1 TBSP of Apple Cider Vinegar

1 cup vanilla yogurt

2 teaspoons vanilla extract

1 teaspoon cinnamon

Chocolate Buttercream:

1/4 cup of butter (soft)

1/4 cup of milk (whole milk)

1/4 cup of cocoa powder

3 cups of powdered sugar

Sprinkle crushed Oreo's on the chocolate frosting

Pipe marshmallow whipped topping in three peaks to make a ghost

Dot with black piping icing

 

 

 

Don't Wear "White" After Labor Day Cupcakes

Don't give up on white after Labor Day, just eat it! Enjoy white-out cupcakes ,vanilla cupcakes with the perfect vanilla buttercream frosting.

Ingredients

  • 1 cup sugar
  • 1 stick of unsalted butter (room temperature)
  • 2 eggs
  • 2 large teaspoons vanilla extract
  • 1 and 3/4 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup Vanilla Yogurt
  • 2/3 cup milk

Perfect Buttercream

  • 1 stick unsalted butter (room temperature)
  • 5 cups powdered sugar
  • 1 teaspoons vanilla
  • 5 Tablespoons heavy whipping cream (room temperature)
  • pinch of salt

 

"Lunch Lady Brownies"

INGREDIENTS

1 cup butter, melted

1/2 cup unsweetened cocoa powder

2 cups all-purpose flour

2 cups granulated sugar

4 large eggs

4 teaspoons vanilla extract

CHOCOLATE FROSTING

1/4 cup butter, softened

1/4 cup milk 

1/4 cup unsweetened cocoa powder

3 cups powdered sugar

INSTRUCTIONS

  1. Preheat oven to 350° F.
  2. Spray 9X13 pan with non stick cooking spray
  3. In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. 
  4. Add the flour and sugar, add eggs and vanilla. Batter should be thicker than most brownie batters.
  5. Pour batter into baking dish
  6. Bake 25 to 30 minutes
  7. FOR CHOCOLATE FROSTING: Beat together all the frosting ingredients.
  8. Pour and spread over warm brownies.

Cherry Pie Cupcakes

Vanilla Cupcake Base

  • 1 cup sugar
  • 1/2 cup butter (1 stick) at room temperature
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 and 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup Vanilla Greek Yogurt
  • 2/3 cup milk
  1. Preheat oven 350 degrees and line cupcake pans.
  2. Mix all dry ingredients in bowl and set aside
  3. In stand mixer with paddle attachment mix butter, sugar, vanilla until fluffy
  4. Add eggs one at a time to wet ingredients on low speed
  5. Alternate dry ingredients, yogurt and milk into wet ingredients until combine

Fresh Cherry Buttercream

  • 1 cup butter, at room temperature
  • 3½ cups powdered sugar
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • 1 cup fresh cherries, pitted and finely chopped
  1. Cream butter in stand mixer with paddle attachment
  2. Add powdered sugar, salt and vanilla
  3. Beat until smooth

Fresh Cherry Filling

  • 4 cups of fresh cherries pitted

  • 1 cup of white sugar

  • 1/4 cup of cornstarch
  1. Put cherries into a saucepan over med/high heat until they start to simmer and release juice (about 10 minutes) Make sure you stir them often so they don't burn.
  2. In a separate bowl mix together the sugar and cornstarch. Pour this mixture over the hot cherries and stir until combined. 
  3. Bring to a simmer and cook until the sauce/filling has become thick

 

Summer Shandy Cupcake with Lemon Buttercream

Recipe for Cupcake

1 box yellow cake mix

1 cup Summer Shandy I prefer Leinenkygel

3 eggs

1/2 cup vegetable oil

Zest from 1 Lemon (remember don't get the white part of the peel)

Mix on low in stand mixer until combined. Bake at 350 degrees for 15 minutes or until a toothpick comes out clean. Make sure your cupcakes are completely cooled before trying to add frosting!

Recipe for Lemon Buttercream

1 stick of unsalted butter, room temperature

4-5 cups confectioners sugar

juice and zest from 1 lemon

Cream butter in large bowl in stand mixer. Add 4 cups confectioners sugar, lemon zest, and 1/2 lemon juice, add more confectioners sugar to desired consistency.

Mom Life

Who knew that being a mom would be so tricky?  Well I didn’t, thanks a lot mom for letting me know that ahead of time!  Not that it would have changed my mind! I am in love with my little girl and I LOVE more than anything being a mom to her.  It’s the little things like when she smiles that makes all the sleepless nights, constant stink of puke and poop that radiates from me all day and the fact that I am lucky to get my hair washed once a week all worth it.  I know that this is a mutual feeling for most moms!

So, I am calling bluff on all those moms that have it together! SERIOUSLY, stop making the rest of us look bad.  If you are able to put lipstick on you are nailing it way to well, I’m lucky to brush my teeth!  Really I went to work the other day, thought I had it together because I had showered and put earrings in and I started to smell something foul.  Well what do you know it was me. Let me ask you a question, what smells worse than rotten milk? Oh I know…. rotten breast milk.  #storyofmylife, when I see these moms that have it all together, yeah you know who you are, it makes me a little depressed.  What in the world am I doing wrong, is it the fact that my child won’t let me put her down, or the fact I won’t put her down.  That is still to be determined.  Either way I want to be one of those moms that is able to go to the gym for a couple hours a day, wash my hair, put on normal clothes, by that I mean not be in my pj’s until 2 pm! 

Just yesterday while working from home I noticed that I was still in my pj’s at 2 pm, I was just hanging out waiting for my daily ritual with my daughter that consists of watching Ellen then Dr. Phil.  I had a freak out moment because I knew my hubby would be home by 4 pm and I didn’t want to be sitting there eating cookies in my pj’s.  So what did I do, got myself up cleaned the kitchen, swept, dusted and put normal clothes on! 

Why do moms feel this pressure to look good, have a clean house and be able to take care of an infant all with seamless effort?  I know that my hubby didn’t set those standards, I’m pretty sure he could care less if I moved from the couch after watching what I went through to get that child here, he thinks I deserve a metal or a key to the city or something.  I am pretty much off the hook from everything to him after he witnessed our daughter being born naturally.  Yes I said naturally, like with no EPIDURAL! It sounded like a good idea when I thought of it before I was pregnant! Well, let me tell you… after my girlfriend had a baby right after me and she told me she couldn’t feel anything I was like, WHAT IN THE WORLD WAS I THINKING!!!!!  Anyway, the pressure that society puts on moms is B-A-N-A-N-A-S.  So, I’m calling bluff on the whole thing! If you have had a child, you deserve to lounge in your pj’s, eat cookies and watch as much Dr. Phil as much as you want and no one can say anything!
