Recipe for Cupcake

1 box yellow cake mix

1 cup Summer Shandy I prefer Leinenkygel

3 eggs

1/2 cup vegetable oil

Zest from 1 Lemon (remember don't get the white part of the peel)

Mix on low in stand mixer until combined. Bake at 350 degrees for 15 minutes or until a toothpick comes out clean. Make sure your cupcakes are completely cooled before trying to add frosting!

Recipe for Lemon Buttercream

1 stick of unsalted butter, room temperature

4-5 cups confectioners sugar

juice and zest from 1 lemon

Cream butter in large bowl in stand mixer. Add 4 cups confectioners sugar, lemon zest, and 1/2 lemon juice, add more confectioners sugar to desired consistency.
